Lame de Boulanger – the art of beautifying bread. The stylish incisions made with the baker’s knife add value to any baked item, and with a little practice, wonderful bread art works can be created, just the way you like it. A good baker’s knife is the tool that turns the baker into an artist. Breads so beautiful and artistic that you don’t really want to cut them.
Another advantage: Slitting the skin of the dough allows you to control crust formation. The gas that is produced by the fermentation process can escape better and the resulting higher proportion of crust ensures a much more intense taste. Tasty breads made from wholemeal wheat flour, rye breads and small baked goods gain in volume and aroma when they are cut into them. KoMo’s baker’s knife and your skill make your baked goods a work of art and thus an individual eye-catcher.

EVERY PIECE OF WOOD REQUIRES RESPECT AND ATTENTION

It’s a long way from the rough wood from the sawmill to the perfect, hand-smooth surface. Just like with KoMo’s devices, many different work steps are necessary and take their time before each blade holder can be held so beautifully and perfectly in the hand.

However, only the wonderful wood of the “ Lame de Boulanger ” should be in your hand. The artistic cutting results can only be achieved with a very sharp blade and  this  blade is very sharp . With this blade, cutting into the dough skin is very easy. With ideal fermentation, filigree patterns and ornaments can be created. The cutting angle should ideally be around 30 degrees. Of course, “ straight ” cuts are also possible.

Only with “ sharper ” blade do the results succeed particularly well, so we recommend changing the blade again and again. We also recommend briefly immersing the knife in water before use and rinsing it with water after successful use. ONLY with Water! Please do not use detergent or brushes for cleaning, this reduces the life of a blade!
