Here we have published some of our favourite wholesome recipes to get you going… Enjoy!

Use freshly ground organic flour and grains only for best results in taste and nurtitional value.


Sourdough Bread

Add 200g wholemeal rye flour or wholemeal spelt flour together with
300ml warm water to your sourdough starter. Leave it at a warm place covered by a tea-towel for 8 hours.

Take off 100g sourdough as your starter culture, keep it in a jar in fridge or freezer.

Use:

200g sourdough
100g freshly ground wholemeal rye flour
100g freshly ground wholemeal wheat flour
100g freshly ground wholemeal spelt flour
100g sunflower and sesame seeds, whole or ground linseeds, buckwheat, rolled oats
150ml water, lukewarm
1 tsp sea- salt or Himalayan salt
1 tsp honey
30g fresh yeast
 ½ tsp of each spice: fennel, cumin, coriander (ground or seeds)

Add all the flour and salt to sourdough; put the honey into warm water, stir in yeast until dissolved, let stand for a few mnutes, and then pour liquid onto flour. Knead dough for 5 min. Heat oven to 30-40 degrees Celsius. Add seeds, whole buckwheat and / or rolled oats, knead again for 5 min.

Form a loaf, sprinkle some seeds on top. Make a cut 0.5cm deep lengthwise into loaf to allow ventilation. Prove dough in oven at 40 Celsius for 30 min. if you use a tin, or bake straight away in oven without pre-heating bake on 200 Celsius for 40 min.

 

Raw Grain Bircher Muesli

Mix freshly rolled quinoa flakes, spelt flakes, barley and buckwheat flakes, rolled oats, freshly kibbled wheat, millet, amaranth etc
Soak the flakes and/or kibbled grains  in water overnight (4-8 hours)
In the morning: add mixed nuts
dried coconut, seeds (pumpkin, sunflower, sesame) 
dried fruits (chopped apricots, raisins, sultanas, figs)
fresh fruits (apple, banana, pear, kiwifruit, orange, pineapple, strawberries, blueberries)
mix it with 1 tbsp fresh cream or 3 tbsp yoghurt or some soy or nut milk, juice or fruit pulp


Fresh Flakes Muesli

Soak prunes and / or figs in water over night
add freshly rolled oats or quinoa flakes and fresh fruit; mix with nuts and seeds as desired

Toasted Cinnamon Muesli, gluten free

Use freshly rolled rice flakes, quinoa flakes and/or millet flakes
Sprinkle with honey or agave syrup, add cinnamon and vanilla as desired
add Sunflower seeds, sesame seeds, pumpkin seeds
Peanuts, almonds, walnuts
Dates, raisins
Mix everything; put onto oven tray and bake at 150 Celsius for 30min.
Add toasted Muesli to freshly rolled oats or gluten free flakes or have it on its own.


Oaty Cracker

125g rolled oats
  25g wholemeal wheat flour
120g sesame, sunflower and poppy seeds
1 tsp sea salt
400ml water
Stir rolled oats, flour and water, soak for 1 hour.
Blend in salt and seeds. Roll thinly onto baking tray (baking paper).
Bake on 175 Celsius for 15 min. Cut with knife into pieces and bake for 45 min.
